I have 20 litre jerry can that I didn't use today, next track day is in 2 weeks, is it ok to keep it till then, or dump it in the car and refill later?

Fuel will be fine! you can actually store fuel for quite a while,
as long as you keep container airtight and keep in a cool garage/shed etc...
best option is to keep container full less air the better.

I started a bike after 3 years sitting, no probs (after charging the battery). Didn't even turn the fuel tap off....
Fuel doesn't go off in a meaningful way.

Keep it cool and sealed and off the concrete floor and it will easily keep till your next track day

why off the concrete floor? i have it sitting upright in a jerry can on my concrete floor in my underground garage, so it's not like the concrete is going to get hot.

You can get some condensation build up in the container. Just put it on some wood or alike.

Leaving fuel unused for a prolonged period (no, 2 weeks wouldnt be long enough to worry about, 3 or 4 may tho), will loose octane levels, and eventually will be no more than standard unleaded fuel.. Noticeable with pinning or uneven idle of engine.
Best use it all up (in car etc) and start fresh if not to be used for a while..

It doesn't lose octane. It can lose volatility as the light ends can come out . Keep it cool and sealed, it will be ok
